Baked brie waffles
Serves 6

The vegetables for the topping are only a suggestion as absolutely anything can sit underneath the melted brie. you could also try different cheeses - just make sure they melt well.

The waffles also great for breakfast served with veggie bacon and maple syrup.

Waffle batter
130g flour
1 teaspoon bicarbonate soda
1 level teaspoon salt
2 eggs
1/2 pint milk
3 egg whites


Topping
1 red pepper
1 courgette
Six slices of brie

For the waffles mix the flour, eggs, soda, salt and milk in a bowl and whisk together until smooth. Whisk up the egg whites to a peak and fold lightly into the mixture. Pan fry in shallow oil. To create a neat shape pour the batteer into ring moulds in the oil. As the batter cooks it will start to rise and set. When the waffle has set take off the ring mould and turn over the waffle and fry the other side. Don't have the temperature up too high as the waffles will burn before they are ready.

Cut the red peppers into strips and the courgettes into slices and saute them in olive oil over a high heat until they are soft and lightly browned. Season them with salt and pepper and use them to top the waffles. Finish with a generous chunk of cheese and bake them in a moderate oven until the cheese is melted.
