Pasta and spinach salad
Serves 6 + vegan

Any pasta can be used for this simple salad. Try adding some olives or fresh tomatoes to posh it up a little. If you want a gluten free version just use a gluten free pasta or maybe some freshly boiled new potatoes even.

Sun dried tomato dressing
1 small jar sun dried tomatoes
200ml olive oil
dash balsamic vinegar
Few leaves fresh basil
Black pepper


Salad ingredients
200g pasta of your choice
1 cucumber
300 - 500g washed baby spinach
Sun dried tomato dressing
Salt and black pepper

For the dressing place all of the ingredients into a blender and whizz them up. The dressing will be thick and is ideal for coating the pasta.

Cook the pasta as per packet instructions. My advice would be to ever so slightly under cook the pasta as it will absorb moisture as it sits in the salad juices. Chop the cucumber into fine slivers and add to the pasta with the spinach, salt and pepper, and as much sun dried tomato dressing as you wish.
