You will need
1 wheat flour tortilla
1 dessertspoon of red pesto or basil pesto, or tomato sauce
1 tomato, sliced
50g (2oz) cheese ie mozzarella
Salt and pepper
Few basil leaves
Mixed leaves
Cucumber, sliced
Mayonnaise or coleslaw

Place a tortilla on a metal baking tray and spread it with a spoon of pesto or a pre prepared pasta sauce. Top with some slices of tomato, cheese and a few sprigs of basil. Turn on your grill (broiler) and grill the tortilla for about 3 minutes until the cheese is melted. Take it out, season it with a little salt and pepper, and top it with the salad vegetables and mayonnaise. Roll up and eat.
