Halloumi and hummus pitta
Serves 4

The special thing about halloumi is that it when it is hot it has a delicious chewy texture. It can also be pan fried without it breaking up which makes it perfect to serve in a pitta bread or hot in a sandwich.

Ingredients
1 pack halloumi
Oil for frying
4 pitta breads
Half a cucumber, sliced
2 tomatoes, sliced
1 small red onion, thinly sliced
Crispy lettuce
4 dessertspoons hummus
First of all cut a thin slice from one edge of each pitta to form one straight edge. Stick a knife into this edge and carefully form a pocket in the pitta bread by moving the blade (see picture). It may help to warm the pittas lightly in the oven first. Fill each pitta with a dessertspoon of hummus or more if you wish.

Cut the halloumi into about 12 thin slices and place them onto a tray. Bring a dry non stick pan to a medium heat, brush each slice of halloumi both sides with oil and pan fry each slice both sides until soft and golden brown. Arrange the slices of halloumi in the pittas, top with the salad ingredients and serve immediately.
